My sausage hash brown breakfast casserole is a very popular recipe. It’s sure to become one of your most beloved recipes as well.
This is a great hack that will show you how to substitute the hash browns for tater tots. But I also get tons of questions about if the hash browns can be substituted for tater tots, so I decided to give this hack a try!
Great news: Replacing the hash browns with tater tots made this a tasty breakfast casserole with a fun twist.
The best part about using tater tots over hash browns is that they already have a layer of fried outsides and brings a bit more crisp to the casserole. No matter what filling you choose, you won’t be disappointed with this filling, delicious, and memorable breakfast.
- 8 eggs
- 1 pound pork sausage (jimmy dean)
- 1 1/2 cups whole milk or heavy cream
- 1 package frozen tater tots (approximately 24 oz)
- 2 cups cheddar cheese
- 1 1/2 tsp salt
- 1 tsp black pepper
- 1/4 tsp garlic powder

Recipe Instructions – full printable version at the bottom of the post without images Preheat oven to 375 and spray a glass 9×13 baking pan with non stick cooking spray.
Brown the meat — I like breakfast sausage, but you can use any beef you like, over medium heat in a skillet, breaking the meat into small pieces.
Remove any excess fat from meat and let it rest.
Combine 8 eggs, 1 1/2 cups of heavy cream, and all of the spices together.
Put all the ingredients in the oven.
Layering Casserole
Start with adding your frozen tater tots in the bottom of the dish. Its fine if some overlap!
Add cooked sausage, two cups of cheese, and finally pour the egg mixture on top.
Bake a casserole dish as much as you can at 400° for approximately 40 minutes to help the edges not cook too quickly and burn. Remove foil from dish after it is done, and bake for another 15-20 minutes until center egg is fully cooked.
Please note that oven times can vary and gas stoves often cook faster, so check at the 40 minute mark.
Your eggs are hard boiled.

A classic breakfast favorite with tater tots, sausage, eggs and cheese, this casserole is a quick and easy make-ahead recipe that you can use as a holiday menu centerpiece or serve it for breakfast on a busy morning.
Ingredients
- 8 eggs
- 1 pound pork sausage jimmy dean
- 1 1/2 cups whole milk or heavy cream
- 1 package frozen tater tots approximately 24 oz
- 2 cups cheddar cheese
- 1 1/2 tsp salt
- 1 tsp black pepper
- 1/4 tsp garlic powder
Instructions
Preheat the oven to 375 and spray a 9 x 13 baking dish with non-stick cooking spray. Brown the meat. Heat the skillet over medium heat. Break up the sausage into small pieces.
Remove the excess grease from cooked meat, whisk 8 eggs with a cup and a half of heavy cream and all spices together, and bake the casserole in a shallow ovenproof dish for about 40 minutes or until cooked through.
Layer frozen tater tots in the bottom of the dish, and then fill the rest of the dish with mac & cheese. Top them off with precooked sausage, and two cups of cheddar cheese. Then cover with whipped eggs and bake for 20 minutes or until puffy.
To make this recipe into a quick and easy dinner, just replace the biscuits and gravy with the tater tot casserole and use 1-2 frozen dinners as the meat. For best results, use a ceramic or stainless steel skillet to cook the egg. A cast iron skillet is ideal because it heats up quickly and evenly, making sure the bottom cooks more slowly than the top of the yolk.
