Parmesan Roasted Potato Ingredients
Preheat oven to 400°F. In a large bowl, combine butter, Parmesan cheese, seasoning, salt and pepper. Set aside. In a medium bowl, cut each potato in half lengthwise and carefully scoop out the flesh.
Put the potato flesh into the bowl with the butter and cheese. Toss until combined. Coat a baking sheet with nonstick cooking spray. Transfer potatoes onto the prepared baking sheet.

Wash red potatoes, cut them in half, and score the bottoms (see image below).

How to Make Parmesan Crusted Potatoes
We’ll start by making these amazing Parmesan crusted and oven roasted potatoes! Melt 1 stick of butter in a 9×13 baking dish. Place the bread in a cold oven. Turn the oven to 400 and wait for it to preheat. Let the butter melt as the oven heats. Remove when butter is melted.
Cut the potatoes in half and score each potato.
In a small bowl, combine cheese and 2 tablespoons of the herbs. Season with salt and pepper and mix well.
Put some sprinkles in the bottom of a baking pan.
Place potatoes, cut side down, into the pan.
Spray the tops of the potatoes with cooking spray and sprinkle with the rest of the herbs.

Parmesan roasted red potatoes are delicious, filling, and quick to make. They’re also a tasty side dish that will fill you up for just about anything!
Ingredients
- 1 stick butter 1/2 cup
- 1/3 cup grated Parmesan cheese
- 3 tablespoons herb seasoning divided (any brand – I use Mrs. Dash)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 lbs red potatoes washed
- nonstick cooking spray
Instructions
Add 1 stick of butter to a 9×13 baking dish.
Place the baking pan in the oven. Turn the oven to 400 and wait until the oven is heated up.
Butter your baking sheet and line the baking sheet with parchment paper. Meanwhile, cut the potatoes in half and score each potato.
Place the parmesan mixture in a zipper-lock bag and cut the tip off of it, and shake to combine.
Sprinkle seasoned salt and pepper mixture over the top.
Sprinkle salt and pepper over the potatoes.
Spray the top of the potatoes with cooking spray, then sprinkle with remaining 1 tablespoon of herb seasoning.
Bake the potatoes, uncovered, for 40 minutes or until they’re tender.
